Tapas (Vegan montaditos) – Vegan recipes

This tapas recipe can perfectly be a healthy snack or a main meal!
You will be amazed how tasty, simple and fresh these montaditos are.

Enjoy!

Ingredients (Amounts and vegetables can be changed):
– Tomatoes – chopped
– Red bell pepper – chopped
– Avocado – chopped
– Beans – cooked
– Lime juice
– Vegan bread slices

Chimichurri sauce: (Oil/vinegar proportion id 3 to 1)
– 3 tbsp Olive oil
– 1 tbsp Balsamic vinegar
– Garlic – crushed
– Oregano fresh – chopped
– Coriander fresh – chopped
– Chile de Arbol – chopped
– Salt to taste

Directions:
– Mix tomatoes, peppers, avocado, beans and lime juice.
– To make the chimichurri sauce, mix oil, balsamic vinegar, garlic, coriander, organo, chili and season with salt as per taste.
– Toast bread slices.
– Put veggies over the bread and drizlle some chimichurri sauce.
