Hi everyone! I’ve got another fabulous pancake recipe for you! This time it’s banana pancakes made using superfoods such as buckwheat, chia seeds as well as maca powder. These pancakes are super healthy for you, are free of refined sugar, eggless and of course also vegan and gluten-free as all of my recipes are. You can also substitute your favourite vegan milk or leave out the chia and maca. I hope you like this recipe and let me know if there’s a particular recipe you’d like to see!
1/2 cup buckwheat
1/4 cup cornmeal
1 1/2 tsp baking powder
1 tbsp maca powder
2 tbsp chia seeds
Pinch of salt
Pinch of cinnamon
2 ripe small bananas
3/4 soy milk (or other vegan milk)
1 tsp vanilla essence
1 tbsp melted coconut oil
Coconut oil for cooking
